Spiral Zucchini Salad
Man, this was the summer of zucchini at my house! The green monsters were practically taking over my kitchen and I couldn’t use them or give them away fast enough.
One of the things that I made that ended up being super delicious AND it used up a bunch of the zucchini was this spiral zucchini salad.
Wow, was it good!
I love the bright colors it has in it and the light vinaigrette dressing.
Such a simple summer food. It was so good, that I made it again and took it to a potluck and people absolutely loved it!
Or at least the adults did. I don’t know too many kids that love vegetables and vinaigrette.
The main thing that you will need to make this salad is a vegetable spiralizer.
There are quite a few on the market these days and if you haven’t noticed, spiralizing vegetables is all the rage these days.
I have really enjoyed spiralizing veggies because it makes them super thin and pretty. I love how curly they get!
Most people used this technique to turn vegetables into a noodle-like consistency. And while yes, they do feel like noodles and I enjoy eating veggies as noodles at times, they are not the real deal. You still know you are eating a vegetable.
But I do like that it helps me eat more vegetables.
And don’t we all need more of that!
Here is the spiralizer that I currently use. I have found it to be very easy to use, easy to clean (I use an old toothbrush to clean it), and easy to store.
I love that it has a tool that helps you get all of the zucchini spiralized. The last one I used didn’t have this tool and I was not able to get the last 3 inches of the zucchini spiralized because I could no longer hold onto it when it got too short. They clearly solved this problem with this model.
I haven’t tried spiralizing any other vegetables but I’m sure it works just as well with other things.
I was considering getting this spiralizer too. Just to see which style I like better.

The dressing on this spiral zucchini salad is a simple vinaigrette that works well on so many things, really. It is just a really good olive oil (this is the kind I like), red wine vinegar (such as this kind), salt and pepper. You can add other things such as fresh garlic, sugar or honey, or mustard for and extra kick if you want to, but it is simply divine on its own!
I love chopping up a quick coleslaw of cabbage, carrots and green onions and adding this same dressing on it.
So delicious!
The other ingredients in the salad are some fresh or frozen corn and some chopped cherry tomatoes.
Simple summer food at it’s finest!

Spiral Zucchini Salad
Ingredients
- 2 cups spiralized zucchini
- 1 cup fresh or frozen corn
- 1 cup cherry tomatoes, halved
- 1/4 cup extra virgin olive oil (good quality)
- 1/4 cup red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Using a vegetable spiralizer, turn the zucchini into zucchini noodles until you have about 2 cups worth. Place into a large bowl.
- If using fresh corn, cut it off the cob and add it to the bowl. If using frozen corn, thaw, drain, and add it to the bowl. Cut the cherry tomatoes in half and add them to the bowl.
- Mix together the olive oil, vinegar, salt, and pepper. Pour over the salad and toss to combine. Serve immediately.
