Corn and Black Bean Salad Recipe
One of the recipes that my husband requests most frequently, especially when we are going to a pot luck, is this one.
It is a Corn and Black Bean Salad.
Really, though, it’s more like a salsa. And most often we serve it with chips.
It is equally delicious as a side salad, on top of grilled chicken, or as a topping for a green salad too.
So many options.
The flavors are fresh and crunchy. The colors are BEAUTIFUL. And the fresh garlic is divine.
Hint: If you are taking something to a group pot luck, take something that includes fresh garlic. It always gets rave reviews!!
I have seen many different versions of this type of salad/salsa floating around the blogosphere, but this is the one that I landed on many years ago and it has been serving me well ever since.
Feel free to tweak it to your liking.
For example, if you like red peppers or avocado, add some of those. If you like raw onions, throw some in. Don’t like cilantro, leave it out.
You get the idea.
Alright, let’s get to the recipe!
You will want to find some sweet corn. If it is in season, by all means, get an ear or two and slice the kernels off the cob. If corn is not in season, frozen corn works great.
Add in a can of rinsed and drained black beans, some chopped tomatoes, chopped cilantro, chopped green onions.
Then add a clove of freshly grated garlic, some salt and lime juice to taste.
Mix and serve. It is so simple, yet SO DELICIOUS!!!

Corn and Black Bean Salad Recipe
Ingredients
- 1 1/2 cups corn kernels, either fresh or frozen
- 2 cans (15 oz) black beans, rinsed and drained
- 2 medium tomatoes, diced
- 4-6 green onions
- 1/2 cup chopped fresh cilantro
- 1 clove garlic, finely grated
- 1 teaspoon salt
- 1/3 cup fresh lime juice
- 1/4 cup olive oil (optional)
Instructions
- In a salad bowl, combine corn, beans, tomatoes, green onions, cilantro, and garlic. Add lime juice, salt, and olive oil (if using). Mix well and serve.
